In other words: 30 left, 12 right, 20 left.

Back on the safe in Gio's, tap the dial to rotate to the left until the number 30 is under the little black triangle at the top. Now tap the arrow on the right on the silver outer ring to change the direction of rotation. Tap the number dial until 12 is under the black triangle, then tap the left arrow on the outer ring to change direction once again, and turn the dial until 20 is now under the black triangle. Tap the handle on the left to open the safe.
